Batwing Stew with Dumplings

1 potato, chopped
1 sweet potato, chopped
2 parsnips, sliced
2 carrotsi, sliced
1 onion, sliced
2 cloves garlici, chopped
coriander
2 cardamom pods
Butter or oil
4 cups vegetable broth
Dumplings-
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
dash of salt
1/2 tsp sugar
3 tbsp shortening (or butter, or coconut oil)
3/4 cup apple cider
2 tbsp powdered milk or soy flour
Dill
Heat a large dutch oven and coat the bottom with melted butter or oil. Add cabbagei, onions, potatoesi, sweet potatoes, parsnips, carrotsi and garlici. Saute for 10 minutes or so.
My children named this batwing stew when I made it with purple cabbagei. It is a very satisfying stew. It has the vegetarian equivalent of the comfort food that is chicken and dumplings.
This meal contains nurturing energy and encourages love and sharing. Be sure to pour lots of loving, nurturing intent into the dumplings as you make them.
You can use bisquick to make your dumplings if you want to save some time. Just follow the directions on the box!
