Spiced Milk with Honey

Ingredients:

1 quart milk
1 tablespoon honey
4 cardamom pods
4 whole cloves
1 cinnamon stick
1 bay leaf

Tie up all the spices in a cheesecloth square, or, if you don't have one you can just put them right in the pan and strain the milk before serving. Combine spices, milk and honey in a saucepan.

Notes:

This is marvelous before bedtime after a long hard day playing in the snow. It warms the heart and soul, as well as the body and casts a sleepy spelli. It's marvelous for topping off the Imbolc festivities just before sending the little ones off to dreamland. Its energies promote familial love, strong bonds and a feeling of being nurtured and loved.

Mulled Cider

Ingredients:

½ gallon apple cider
2 cinnamon sticks
5 whole cloves
1 orange, sliced

Put it all in a saucepan. Simmer for 20-30 minutes. Strain and serve hot.

Notes:

This beverage is traditional at harvest gatherings and as a special treat when the kids come in from Trick or Treating on Halloween, or to warm up your hands sitting around the bonfire on Samhain. It's a great warm up on a brisk autumn day.

We use apple cider for our harvest and Samhain libations. It is great for giving thanks for successes in the areas of prosperity and love, and for drawing prosperity and love. This beverage features both sun energies and cthonic energies.

Quick Witch Tips:

You can buy mulling spices at most grocery stores in the late autumn. Follow the directions on the package.

Extra Hot Chocolate

Ingredients:

Per serving you need-
1 cup of milk
a dash cayenne pepper powder
1/4 tsp cinnamon
1 tbsp Cocoa
1 tsbsp powdered milk
1 drop vanilla extract

Combine all dried ingredients and mix well. Warm the milk in a sauce pan, stirring constantly. Do not allow it to boil!

Notes:

I have heard this called Mexican and Aztec hot chocolate, though I'm not sure that's accurate. Either way, it warms you to the toes and keeps you warm much longer than other folks's cocoa and it's got a greater depth of flavor. It's also not very sweet so you might want to provide your guests with a sugar bowl.
For some, chocolate is a traditional Day of the Dead offering and this makes a great libation during Samhain and Rites of Passing. For others, this beverage combines the energies of Ares and Aphrodite and that means passion- like Beltane. But it might be too hot.

This beverage is warming in more ways than one. It's a playful blend of male and female energies that will get your circulation going and may spark a bit of lust while it's at it. Be prepared for the release of some very playful energies when you prepare this beverage; Perfect for snuggling on a cold winter's night.

But this isn't an adult's only beverage; kids love it too and t's great for a sledding break.

Quick Witch Tips:

Just add some cinnamon, ceyenne and vanilla to some instant hot cocoa for a quick treat.

Dandelion Wine

Ingredients:

Here's an old favorite for Midsummer. My grandfather was famous for his dandelioni wine.

1 gallon fresh dandelion flowers (See note)
1 gallon boiling water
3-4 pounds sugar
1 lemon
1 orange
Brewer’s yeast (wine yeast?)

Take a gallon of fresh picked dandelioni flowers and place them in a large tub, pour 1 gallon of boiling water over them and let it steep for about 10 or so days stirring now and then.

Notes:

Dandelion blossoms are actually made up of many tiny yellow flowers that many folks take to be petals. Only these should be used in to make the wine, not the green bracht that holds them all together as that's very bitter. Taste the different parts and you'll see. Dandelion flowers are delicious!

This recipe has strong solar associations so it is great for use at sun festivals, such as Midsummer day! Also, try this wine as an aid to divinationi, especially in association with love.

Dandelion Punch

Ingredients:

If you're serving dandelioni wine for your Midsummer gathering, be sure to also serve dandelion punch for the kids and those of us that don't drink!

3 cups dandelion flowers, rinsed and separated
1 gallon orange juice
juice of 1 lemon
1/4 cup of sugar
Ginger Ale (Vernors is the only popular brand that actually has ginger.)

Warm the orange juice and lemon together, then add the dandelions. Add the sugar, stirring constantly until dissolved. Let cool and then refrigerate overnight.

Notes:

Dandelion punch is a traditional beverage for MayDay and Midsummer gatherings. It has strong solar energy and strong male energy. Drink it at the beginning of a project (or season) to encourage success in your endeavors and to enhance your health and strength as you move toward completion.

Quick Witch Tips:

To speed things up, have the kids pick your dandelions for you and use pre-squeezed juice. Otherwise, this couldn't be quicker or easier to put together!

PS Make sure you only use yellow dandelioni flowers, not the green bracts or fuzzy bits!

Calendula

Calendula is a mediterranean annual that has become a popular garden plant in much of the world.

Propagation:

Calendula likes a full sun position, but doesn't like too much heatl. It will grow readily from seed and will reseed if allowed to do so in mild climates. Those who live in colder climates should gather the seeds in autumn and replant the following year. Seeds should be planted right in the garden as soon as the danger of frost has passed and barely covered. Thin to 12 inches apart. Although they are tolerant of poor soils, calendula prefers to be planted in a nice bed of compost and some mulch around its roots once it gets going in the summer.

They do well in pots and window boxes too. However, many people find their aroma to be too overpowering for indoors.

Calendula are attractive to aphids which makes them a good diversion plant for more delicate plants. They are also susceptible to mildew if it is too hot and humid. Use a soap spray to get rid of aphids and a gentle fungacide will take care of the mildew.

History and Folklore:

The ancient Egyptians, Greeks and Romans all loved calendula and used it for culinary and healing purposes. During the medieval period it was considered a cure for just about everything. During the Rennaissance, it was a popular garden flower and commonly used as a pot herb earning it the name pot marigold.

Shakespear honored the flower in a verse in A Winter's Tale
""Hot lavender, mints, savoury, marjoram;
The marigold, that goes to bed wi' the sun
And with him rises weeping: these are flowers.""
It was said that if marigold didn't open by 7am there would be a thunderstorm.

One medieval belief about marigold was that it would strip a witch of her will.

Harvesting & Storage:

Pick flowers as soon as they open as they get progressively more bitter the older they get. Dry upside down in a dark place with good ventilation. Once they are dry, remove the petals and store in a sealed jar away from light and heat which can damage the oils they contain.

Household Use:

Calendula makes for long lasting cut flowers, but the scent is overpowering for some.

Petals can be used to make a lovely yellow dye. It has been used to lighten hair.

Magical Attributes:

Calendula symbolizes love and constancy and is great for wedding bouquets and decorations. It is the traditional "he loves me, he loves me not" flower and is useful for love potions.

Wreaths of marigold hung over a door are said to keep evil and negativity from entering.

Dried petals can be strewn to consecrate an area or burned in consecrationi insense. They are also a good addition to dream pillows.

Healing Attributes:

Calendula is antibacterial, antifungal, anti-inflammatory and antiseptic and is often added to healing salves.

Culinary Use:

Calendula petals can be used as a food coloring agent and has traditionally been used to color butter and cheese. Many people use it to make yellow rice without saffron. They are also good in salads or sprinkled over cakes for a festive look.

Jerusalem Artichoke

Native to eastern North America. Grown for its tubor, root vegetable.

Propagation:

Jerusalem artichokes are very hardy, vigorous growers. Tubors, or chunks of tubors can be planted in spring or autumn in fertile soil in a sunny spot or dappled shade and they will grow like weeds. Mine are planted in a row with part of the row in mostly shade and the other in in part sun. The ones in the shade are considerably shorter than the ones in the sun, but they are all taller than I am and I have to stand on tiptoe to reach the flowers in the part sun plants.

Don't worry if they take awhile to sprout in the spring. They generally make their first appearance in late spring to early summer and look like little baby sunflowers. They should be heavily mulched every autumn. Lack of proper fertilization will result in loss of flavor. That being said, the plants themselves are not picky and will grow in just about any soil. They do not like to grow in places where there aren't significantly defined seasons, however.

Don't be afraid to harvest the first year as each plant produces about 75 tubers. Wait till after the first frost to begin harvesting. If you are going to grow sunchokes, make sure to harvest every year to prevent them from going crazy. Don't worry, it's almost impossible to dig up every tuber, even when you want to. Seeds ripen in November. Best not to let the plant reseed itself (although the birds and squirrels like them). It will spread just fine by tubers, you don't want it in the neighbor's yard too!

Sunchokes don't play nice with other plants. They aren't bothered by weeds and will smother out bedmates. This year I planted sunflowers with them and they seemed to do well as they were in full bloom before the sunchokes were even thinking about blooming and it was a nice affect. Then the squirrels mowed down the sunflowers and that was the end of that. (The Japanese Beetles like the sunchokes but not enough to cause any serious damage) Next year I am thinking of planting more sunflowers and maybe some beans with them so the beans can climb the Sunchokes and sunflowers, though I have been warned against this because all three are susceptable to the same Sclerotina or white mold disease.

Be careful! These plants can be highly invasive. In fact, it is listed as a noxious weed in Minnesota.

Baby sunchokes are susceptable to slug damage.

Plants can also be started from seeds but will be very delicate their first year. They take up to 17 days to sprout.

History and Folklore:

Jerusalem Artichoke is a native to North America (not Jerusalem) and is not an artichoke (artichokes are members of the thistle family, Sunchokes are members of the sunflower family). Early settlers first called the plant girasole, the Italian word for sunflower. Apparently this word sounds like Jerusalem. It may also have occasionally been specified as the articiocco (edible) girasole, which sounds similar to artichoke.

The flavor of the root is said to be similar to the flavor of artichokes. But I think it's closer to a water chestnut.

This plant was first cultivated by Native Americans who called it Sun Root. It has been propegated for over 500 years. It was "discovered" by Champlain at Cape Cod in 1605 where it was grown by the natives there along with beans and maize. Lewis and Clark were also fed Sunchokes by Native Americans during their trek across the US.

Today this plant is grown in the US for human food, livestock fodder (it is especially loved by pigs), alcohol production and as a source of fructose.

Harvesting & Storage:

Roots can be dug in the autumn after the plant dies back. For best flavor, wait until after you get a good hard frost before digging up the roots. Store them in a cool place that isn't too dry. Wrapped in plastic in the fridge will do nicely. They will get bitter if kept too long in storage. It is best to leave them in the ground and dig them up as you need them. You can continue digging them right into early spring.

Household Use:

The flowers are pretty and the seeds will attract birds and squirrels and can be used in crafts.

Magical Attributes:

Like all Helianthus flowers, this one is sacred to Helios, the Roman Apollo, Ra and other sun Gods.

Healing Attributes:

Because it stores its sugar as inulin, which converts to fructose, which is safe for diabetics, Sunchoke is recommended as a potato substitute for diabetics. It does not cause sugar spikes like starch does (in potatoes) and, according to some herbalists (of the Edgar Cayce school) has a healing effect on the pancreas.

A flour can be made of roasted sunchokes and this is recommended for use by people who are allergic to grains.

The tuber's high potassium content needs to be taken into account, however, especially by those with kidney disorders. It has six times the potassium of a banana.

Sunchoke is also said to encourage the growth of natural probiotics, or helpful bacteria, in the gut. This is helpful for people with problems with candida or yeast overgrowth.

It is recommended that sunchokes be added to the diet slowly to allow the body to get used to it. There is also the occassional inulin allergy to watch out for.

Culinary Use:

Jerusalem artichokes are high in potassium, iron, fiber, niacin, thiamine, phosphorus and copper. Scrub and cut them immediately prior to eating them, as they brown quickly. Do not peel them as most of their nutrients are stored close to the skin.

The tubers can be prepared like potatoes, but tend to get overly mushy when boiled. They are best very lightly steamed or stir fried and some people enjoy them raw in salads. They are crisp and sweet if they've been subjected to cold.

Starch is stored in Sunchoke tubers as inulin which is not easily digestable by humans, so it is a good food for diabetics and dieters who can tolerate it. Some folks have a hard time digesting it and in these folks it can cause gas and bloating. I am told that if you starti out with small amounts and get your body used to it, it'll learn to digest it.

Sunchokes have been used in France for wine and beer production.

Notes: I cooked my first Jerusalem Artichokes last night. These are the babies I planted last spring. I don't want to eat too many now because I want them to establish, so I only made a few. For science. I scrubbed them (didn't peel them) sliced them thin and sauted them for about 10 minutes in olive oil.
Oh my goodness.
Are they good.
They do taste a bit like artichokes- not like those pickled artichoke hearts you get on your pizza, but like properly steamed artichokes. The kind you pick out one petal at a time and dip in butter and scrape the meat off with your teeth and marvel allowed that we go through so much trouble for so little food just cause it tastes so good. Those. And these jerusalem artichokes taste buttery and rich and warm. It sort of reminded me of back in the day when I wasn't a vegetarian and I used to fry my potatoes in bacon grease. Yum. Oh, and ah.. they seem to have digested fine too.

Eyebright

Botanical Name:

Eyebright is an annual that is common to dry fields and pasture lands in its native Britain and also in the US where it has become naturalized.

Propagation:

Eyebright prefers alkoline soil and does not do well in perfect well-tended beds. It prefers to grow weedlike in the shadow of other plants. It doesn't transplant well, so scatter the seeds randomly among your other plants in your herb garden. It is notoriously difficult to grow in the garden and prefers to the wild grasslands. You could try growing it in your lawn if you have a section you won't be mowing. Good luck!

Eyebright is best harvested in late summer when it is in full bloom. Cut the full herb and hang upside down to dry. Use within one year. The leaves and flowers are all used together.

History and Folklore:

The name Euphrasia is taken from the name of one of the three Greek Graces, Euphrosyne, meaning gladness. According to legend, the linnet, a bird whose Greek name comes from the same root, first used this plant to clear the sight of its young and then passed the knowledge on to mankind.

Spenser, Milton and other poets mention Eyebright in their poems.

In the time of Queen Elizabeth, Eyebright Ale was a beverage believed to cheer the spirit.

Household Use:

Eyebright is an ingredient in British Herbal Tobacco and makes a decent smoke.

Magical Attributes:

Eyebright is of masculine nature and associated with the element of air, the sun, and Leo. It is named after one of the three Graces of the Greek Pantheon, Euphrosyne, Goddess of Joy and Mirth. It is also associated with the Tower Tarot card.

Place a few drops of infusioni of eyebright on your eyelids before sleeping to have prophetic dreams and during the day to see that which is normally unseen.

Use in spells to help you (or others) see situations clearly and objectively, to avoid or remove deception and metaphorical cloudiness.

Use also in spells to help rise above difficult situations and to see the silver lining on dark clouds.

Appropriate for all rituals and celebrations of thanksgiving and any rituali associated with the Graces or any joyous event, especially one that marks the end of one era and the beginning of another.

It is appropriate for offerings of thankgiving.

Healing Attributes:

Eyebright, as its name implies, is traditionally used for just about any ailment of the eye. An infusioni of one ounce of herb per pint of water is an excellent all-purpose eyewash good for removing dust, debris and relieving irritation caused by allergies and mild conjunctivitis. Just put it in an eyewash cup and perform the eyewash as you would normally. (Read the directions that came with the cup)

For external eye irritations and inflammations, and to reduce general puffiness and dark circles, make the infusion with milk instead of water and apply to the eyelids and surrounding area with a cotton ball.

Eyebright can also be smoked to help relieve chronic bronchial inflammation.

Eyebright tea may be drunk as needed for general allergy symptoms, dry coughs and sinus infections. This is also said to enhance memory function.

Dimming of eyesight can result from prolonged us, or use of strong concentrations of eyebright.

None of the traditional uses of eyebright have ever been officially studied.

Because the safety of eyebright's use during pregnancy and breastfeeding has not been established, it is best avoided during these times.

Infusioni of eyebright is a must-have for your herbal first aid kit.

Culinary Use:

Eyebright can be added to teas.

Crocus

Crocus are members of the iris family native to Central and Eastern Europe, North Africa, the Middle East, Central Asia and western China.

Propagation:

Most crocuses like full sun and well drained soil, though there is quite a bit of variation between species. Be sure to do your research for the specific species you have.

Crocuses grow from corms, which are planted in autumn about 2-3 inches deep. They will pop up from beneath the snow like daisies (why do they say pop up like daisies- they don't pop. Crocuses do!) in the early spring. They can be killed by a late frost though.

Squirrels like to eat crocus corms.

In areas colder than zone 6, autumn crocuses may not do well in cold winters. After the first couple of frosts, but before winter has really set in, they should be dug up and stored covered with sand or peat moss in a cool dry place, about 50 degrees until after the danger of frost has passed in the spring.

After about 4 to 6 years, your crocuses will need to be divided. Do this by digging up the corms right after the foliage has faded and replanting them right away or storing them in a box of sand or peat moss until autumn planting time.

History and Folklore:

The name crocus is krokos in Greek, karkom in Hebrew, kurkama in Aramaic, and kurkum in Arabic and Persion. It means yellow, presumably referring to the saffron spice obtained from the autumn saffron crocus although this flower is actually purple! Saffron is an extremely expensive ingredient made from the sexual organs of Crocus sativa that also produces a fabulous yellow dye.

Although many of our garden crocuses are "Dutch", they are not native to the Netherlands but were first brought there by an ambassador from the Holy Roman Empire.

Homer referred often to the Goddess Eos as saffron-robed.

Saffron is the most expensive spice in the world. Some sites claim that saffron is $200-300 per ounce. I've seen it at $90 an ounce, but this may not have been the good stuff. It was used to dye the robes of royalty and was once a symbol of status and wealth.

Harvesting & Storage:

You can pick any crocus and put it in a vase to bring its beauty into the house.

Crocus sativa is an autumn blooming crocus that provides saffron. The finest saffron is made from the stigmas. The next finest grade is fram the stamens. The petals can be eaten as a vegetable. Harvest the stigmas and stamens (there are 3 of each, if there aren't, you've got the wrong flower) on a sunny day when the flowers are fully open. You can pick the whole flower, or simply pluck out the parts you want with your fingers or a pair of tweezers.

Lay your stigmas flat on a bit of waxed paper in a warm place to dry and store in an air tight container.

Household Use:

Saffron can be used to make a fabulous bright yellow dye, paint or ink. You need to use a mordant such as alum to make the saffron colorfast or the color will be gone the first time you use it. It can also be used to color eggs. Use vinegar in the water to set the color.

Magical Attributes:

Spring crocus is associated with Venus, Eos and Aphrodite, water and Mercury and Venus.

Saffron is associated with Eos and with Venus and Aphrodite. It is also associated with the Sun and mars, Leo and fire. For centuries, saffron has been associated with wealth, power and rarity. This makes it an excellent offering for any deity and is a traditional ingredient in crescent moon cakes made in honor of the Phoenician Goddess Ashtoreth.

It is also useful in spells aimed toward wealth and recognition, to bring strength. It can also be infused into holy wateri and burned in censors for various rituals.

It is also proported to be an aphrodesiac. Hot date? Two words. Indian food.

An infusioni of saffron is also said to help enhance psychic abilities.

Rinsing bedlinens in an infusion of saffron (or possibly a whole crocus) is said to help bring strength to the body while one sleeps.

Spring crocus is a traditional decoration for early spring festivals such as Imbolc and Ostara. It is also useful for all spells related to new beginnings.

Any crocus (autumn, spring, whatever) can be used in spells for love, friendship, settling disputes, peace and divinationi.

Healing Attributes:

Saffron has been used for treating a variety of illnesses including measles, bladder, kidney and liver disorders and diabetes. Modern studies show that it may be useful in treating cancer by helping to fight tumers and easing the discomfort associated with chemotherapy. It has also been used to treat recovering alcoholics and is said to help repair damage done to the brain by alcoholism. An infusioni of saffron is said to help relieve depression.

Culinary Use:

Stigmas gathered from Crocus sativa (and only this one, no other species!) is a common flavoring in many ethnic dishes. The red-orange threads should be soaked for 20 minutes in whatever liquid you are using for your recipe and then added early in the cooking process.

Saffron is especially good with rice and is a traditional ingredient in many rice dishes.

Practical Kitchen Witchery:

You only need to use a few threads of saffron for cooking. Its flavor is not strong, but it doesn't get stronger if you use more, it just wastes money.

Be sure if you are eating a crocus (petals, stamen, stigmas) that you are eating Crocus sativa. It will have six petals, three bright orangish red stigmas and three similarly colored stamen and 6-9 grasslike leaves. The petals will be violet in color, darker at the throat and somewhat vieny.

Chamomile

Roman chamomile is usually propagated by division.
German chamomile is usually grown from seed. Sow directly into soil in the spring. It will reseed itself each year if you allow the heads to go to seed.

Chamomile prefers sandy, slightly acidic soil and direct sunlight, but likes a bit of shade if it gets too hot on a regular basis.

History and Folklore:

The word Chamomile comes from the Greek meaning "ground apple", probably because of its apple-like fragrance.

The Romans used Chamomile for incense. Roman Chamomile gained its name, not from ancient Rome, but because a 19th century plant collector found some growing on the ruins of the coliseum in Rome.

Chamomile was used in ancient Egypt for fevers and was dedicated to their Sun God Ra.

To the Anglo Saxons, it was one of the nine sacred herbs.

Harvesting & Storage:

Cut flower tops as they form and hang or spread on cloth to dry.

Household Use:

Chamomile added to the bath is very relaxing. It is especially good for fretful babies.

Chamomile tea is an excellent rinse for brightening blonde hair.

The dried flowers are excellent in potpourri.

Infuse chamomile flowers in milk for a soothing skin cleanser that both fights acne and moisturizes. Use within one week.

Chamomile planted near sick or delicate plants will help them return to or maintain their health.

Water young plants with chamomile tea to prevent "damping off".

Magical Attributes:

Chamomile is associated with the Sun, Leo and the element of Water. It helps cleanse and invigorate the throat chakra (5th). It is associated with various sun Gods, including Ra, Cernunnos, Lugh and others.

It is used in spells for money, peace, love, tranquility and purification.

An infusioni used to wash thresholds (doors and windows) will help keep unwanted energies or entities from passing through. Sprinkle powdered chamomile flowers around your self or home to remove spells cast against you and to prevent fires and lightening strikes. You may also use herbal water, if you prefer.

Use it in a rituali bath before performing spells for any of these purposes. Just a simple chamomile bath while visualizing will increase your attractiveness to the opposite sex. Also, use it in a bath as part of a spelli to release a loved one, or to release feelings of pain, loss or anger.

Washing your hands in chamomile water before gambling will increase your luck.

Add to sachets for luck or money. Or place pressed chamomile flowers in your wallet to attract money to it.

Use in meditationi incense.

Healing Attributes:

German chamomile is most often used in healing in the US, but Roman chamomile works as well.

It relaxes the body and mind and promotes a good night's sleep. It's safe enough to use for children. Also for teething stress and colic. Scientific studies have shown that it acts like leading anti anxiety medications, check with your doctor if you plan to use it this way. For nerves and insomnia, drink warm at bedtime. Can mix with warm milk and honey.

It is also a gentle muscle relaxant, anti-spasmodic and anti-inflammatory. It can be used, especially in combination with similar herbs, to sooth problems associated with muscle cramps and spasms. Especially useful for menstrual cramps. Drink two or three cups of tea per day.

It aids in digestion and sooths gastric complaints and colitis including irritable bowel problems. It also safely relieves morning sickness and restlessness that comes with pregnancy. For stomach problems, including gastritis, colitis and morning sickness, drink a cup of tea an empty stomach first thing in the morning hot or cold.

When used topically, it speeds the healing of cuts, scrapes, blisters and burns. It is also helpful for rashes, eczema and other skin inflammation. Add it to a salve, rinse the affected area with chamomile tea, or add a few drops of essential oil to bathwater.

Do not use ointments for burns, use compresses or light lotions instead. Oils hold in body heat and don't let the burns heal.

Chamomile mouthwash helps keep gums healthy and soothes mouth inflammations.

Chamomile Teai- 2 teaspoons German Chamomile flowers to 1 mug of boiling water. Cover and steep five minutes.

Chamomile may cause allergic reactions in those allergic to ragweed.

Chamomile should not be used by people who are already using blood thinners because some constituents may have anticoagulant action.

Culinary Use:

Roman chamomile is most often used in cooking.

The fresh leaves are good mixed with butter or sour cream for potatoes.

In Spain it is used to flavor Mantazilla, a light sherry.

Chamomile flowers were used in Anglo Saxon Europe for making beer until they started using hops.
